In a nutshell (if you’ll forgive the pun), raw and living foods are uncooked vegetables, fruits, nuts, seeds and sprouted grains. In other words, pretty much everything edible that grows from the earth and hasn’t been cooked above 40.5°C – the point at which natural enzymes and nutrients are destroyed. We use dehydrators instead to dry the food without cooking away its goodness.
Why? Because nature is smart. All raw vegetables, fruits, nuts and seeds contain the exact digestive enzyme information your body needs to break the food down easily, freeing up vital energy resources. But with artificially processed food or food that’s been cooked, this vital information gets mixed up or destroyed altogether. So your body has to spend time and valuable energy working it out.
